Here’s an attempt to make some fluid simulation with a bullet and a water sphere with 0 gravity.
After a bake and good render you should obtain something like that :

If you use Blender >= 2.62 change the “Speed” in the domain fluid sim tab to 1.0 instead of 0.0 in order to not have the bullet go trough the sphere without collision.
